WHere is an easy interpretation of a beverage featured on the seasonal drinks list. It's a batch prepared mix which is packed with essence of the Christmas time, making it ideal for hosting a festive gathering. Save the extra citrus syrup for brunch beverages, puddings, or to make additional servings of this cocktail.
The Bikini Cocktail
Serves 10 servings
For the Clementine Syrup (makes 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar
Ingredients for the Cocktail (produces 850ml, to serve 10)
400ml premium vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine syrup (see above)
A few cranberries, for garnish
Mandarin essential oil, for finishing
Instructions
Making the Cordial: Put all the ingredients in a saucepan, bring to a simmer, agitating so the sugar melts. Then, take off the burner and leave to cool down fully. Pour into an clean bottle, close it keeping it chilled, it will last for around a month.
For the Batch Mix: Combine all the spirits and syrup into a large bottle, leave to sit for an hour, then filter it preferably using a fine cloth, so it's completely strained.
When ready to serve: Measure 85ml of the cocktail base into a mixing glass containing ice, and stir lightly for one minute to chill. Strain into an cold coupe glass or a similar vessel, garnish with some cranberries and complete it with a brief mist of the essential oil over the top.
